Vitamine sind organische Verbindungen, welche der Organismus zur Erhaltung der Gesundheit und physiologischer Funktionen benötigt, die aber im Stoffwechsel entweder gar nicht oder aber nicht ausreichend synthetisiert werden. Vitamine sind deshalb für höhere Organismen essenzielle bzw.konditionell essenzielle Substrate, die regelmäßig zugeführt werden müssen.
