Quality Economic Losses in Brazil’s Pork Industry

Abstract

The European Union, the United States, and Brazil respond to 74% of pork carcass production in the world. However, its productivity is affected by quality issues in the production process. Quality is the main driver in pork production to guarantee food security and food safety, besides reducing food losses. The objective of this paper investigated the causes of Brazil’s pork carcass condemnation and calculated its respective costs. Carcass condemnation is the most appropriate measure to assess quality in production. A descriptive statistical analysis was performed using data between 2010 and 2014. We applied the Pareto Analysis in order to identify the main parts rejected and the main reason for these rejects. To estimate the Brazilian industry costs, we calculated comparing losses with pork prices in the Brazilian market, in US dollars. The results showed that the cost of losses for the Pork Industry was estimated in US$ 112 million per period analyzed.
