Abstract
The sensory analysis of honey is a helpful tool, together with physicochemical and palynological analysis, to measure honey quality, valuing its botanical and geographical origin. In order to realize a professional sensory analysis, it is necessary to select and train the future panelists by testing their sight, smell, taste and touch (inside the mouth). With this objective, the panelist must be trained on specific color scales for liquid and crystallized honeys, intensity smell scales, primary tastes (sweetness, acidity, bitterness and salty), viscosity, adhesiveness, and crystallization among others to be able to describe honey sensory properties in a reliable way. The tasting room must have some specific characteristics so that panelists can describe their sensations in an objective way. The session must elapse with no distractions. The panel chief oversees the order in which the samples are analyzed, the session’s coordination and everything involved, and appropriate statistic assessments derived from descriptive data record sheet developed by the panel. The panelists not only assess each honey attribute punctuating the corresponding scale but write down their feelings or sensations about smells and aroma, or primary and secondary appreciated tastes, etc. Many honeys are well-known worldwide and some distinctive data is provided in this chapter.
