Abstract

Chapter 3 informs in a short and clear format about the spectrum of the different mycotoxins contamination cereals and cereal products. Here, the different fungal genera Alternaria, Aspergillus, Claviceps, Fusarium, and Penicillium and their produced mycotoxins are listed alphabetically. Each mycotoxin of chapter 1 is cited. Chapter 3 serves to attain a fundamental overview of which mycotoxins could be detected in cereals and cereal products. More detailed information can be found in chapter 1.
