Abstract
Chapter 2 is an extension to the overview of mycotoxin contamination of cereals and cereal products. Further mycotoxins and microbial metabolites, e.g., agroclavine, andrastatin, aurofusarin, brevianamide F, butenolide, chlamydosporol, chloramphenicol, culmorin, curvularin, cytochalasin E, deoxynivalenol-3-glucoside, emodin, equisetin, festuclavine, fumonisin A and C series, fumonisin B1 (hydrolized), griseofulvin, macrosporin, norsolorinic acid, penitrem A, physicon, rugulosin, tentotoxin, tryptofol, ɑ-zearalenol, and ß-zearalenol, which have been detected in certain cereals and cereal products are quoted. These are for example barley, beer, bread, breakfast cereals, corn flakes, food, maize, maize meal, maize products, masa, oats, rice, snacks, tortilla, tortilla chips, wheat flour, and wheat.
