Abstract
Fungi have played a very important role throughout the history of mankind and have been used in different ways, such as for nutrition, medicine, and religion. Several human groups have used fungi to develop the fermentation process and improve production techniques for foods, condiments, and fermented beverages, such as beers and wines. A discussion of the degree of affinity that different human groups have for fungi will be presented, as well as several ways in which humans have appropriated these organisms.
