Abstract

Noodles are one of the oldest forms of the processed food consumed and it constitutes an important component of diets of the communities living in South East Asia, for example, China, Japan, Indonesia, Malaysia, and Thailand. In recent years, noodles have also become popular and their consumption is increasing with each passing day in other parts of the world, for example developing economies like India and Pakistan. The developed and emerging economies like the USA, Mexico, Brazil, and European countries are promising markets for noodles. As per one global estimate, more than 1 billion meals containing noodles were served in the last year thus showing the rapid growing market.
