Abstract
Exotic fruits are usually defined as fruits of unique sensory characteristics and limited market share. This chapter aims at introducing concepts related to exotic fruits by means of presenting previous reviews on this subject, along with previously published information on the chemical characterization of exotic fruits. Reading this chapter is worthwhile as it provides the reader with information conceptual information related to the next chapters, which facilitates the comprehension of the purpose of the book.
