Abstract

The chapter elaborately discusses all aspects of postharvest treatment of turmeric rhizomes, starting from washing, boiling, drying, and storage. The different drying methods are discussed in the chapter. Additionally, polishing, coloring, and grading of the rhizomes are also discussed in the chapter. The last part of the chapter addresses storage, storage losses, and quality specification, including commercial requirements, such as value addition. In the value addition section of the chapter, discussion focusses on oleoresin, essential oils, curry powder, and newer methods of value addition, such as spray-drying, supercritical CO2 extraction of curcuminoids and turmerones, and microwave-assisted extraction technique of curcuminoids.
