Abstract

Vitamin A is an unsaturated 20-carbon cyclic alcohol. Its main sources are preformed vitamin A (retinol or retinyl esters) from animal food, especially liver and fish oil, in a lesser degree from dairy products and fortified foods, and precursors as β3-carotene and other vitamin A-forming carotenoids from green plants, carrots, and some fruits (1).
