Abstract
This statement, taken from the 1988 Surgeon General’s Report on Nutrition and Health (1), offers an indication of both the challenge and the opportunity facing the nutrition community for the twenty-first century. These are times of unprecedented change. In a historical sense, changes in the nutritional challenges that have occurred in this century have been more dramatic than those that occurred over the entire course of the previous millennium, as the dominant nutritional issues have shifted from those of nutrient deficiency to nutrient excess in the developed world.
For the two out of three adult Americans who do not smoke and do not drink excessively, one personal choice seems to influence long-term health prospects more than any other; what we eat.
