Abstract

Traditional Indian dairy products hold a very important place in social, cultural and economic life in India. Since ages, these products have been prepared at home or by small-scale entrepreneurs. But because of huge demands, systematic efforts have been made by the industry and research institutions for large-scale mechanized production of traditional dairy products. Technological advances for major Indian dairy products like khoa, chhana, paneer, shrikhand and ghee have been discussed in this chapter.
