Abstract
All microorganisms which utilize proteins as nutrient materials produce proteolytic enzymes necessary for hydrolysis of the proteins. It therefore follows that there must be a large number of microbial proteinases produced by various species of microorganisms, including many bacteria, molds, and yeasts. Only a very limited number of these numerous microbial proteinases have been investigated at all, and those available as commercial products are few indeed. However, these latter have become of great practical and economic importance.
