Abstract

Most dietary fat is provided by triacylglycerols, which must be extensively hydrolysed to their constituent fatty acids before they can be assimilated by the body. In most adults, the process of fat digestion is very efficient and the hydrolysis of triacylglycerols is accomplished almost entirely in the small intestine by the lipase secreted from the pancreas.
