Abstract

Eicosanoid precursors for commercial utilization are currently obtained predominantly from animal sources (Ratledge, 1994). However, the mucoralean fungi turned out to be an alternative source (Shimizu and Yamada, 1989; Ratledge, 1994). These fungi are more suitable for the production of large quantities of eicosanoid precursors, such as arachidonic acid [20: 4(ω6)], dihomo-gamma-linolenic acid [20: 3(ω6)], eicosapentaenoic acid [20: 5(ω3)] and gamma-linolenic acid [18: 3(ω6)]. In order to develop commercial biotechnological processes, it is necessary that favourable fungal strains are selected and that these are screened for the production of eicosanoid precursors from more affordable substrates. The present study reviews the pivotal role of mucoralean fungi in the production of eicosanoid precursors.
