Abstract

Lipid polymorphism is a most unusual phenomenon. Depending on the external conditions such as water content, temperature, presence of proteins or metal ions etc., lipids can form aggregates of quite different long-range orders. Due mainly to the pioneering X-ray diffraction work of V. Luzzati and his co-workers1 we have obtained a firm understanding of the principles of lipid organization and of the types of possible structures.
