Abstract

Our understanding of the chemical processes leading to the digestion and absorption of proteins has undergone significant changes in the last century. Although the existence of gastric and pancreatic “ferments” predates any published notions of the form in which protein was assimilated, the identification of peptones as soluble breakdown products of proteins, produced as a result of the action of proteases, made those poorly defined products candidate substrates for absorption.
