Rapid Methods for the Detection of Listeria

Abstract

The presence of Listeria monocytogenes in milk and other food products represents an ever increasing food safety problem. Infants and immunocompromised persons are at particular risk (Gellin and Broome 1989). The techniques currently available for the detection and enumeration of L. monocytogenes are not rapid enough to assure the safety of the product prior to its consumption. These techniques are only useful in diagnosing the probable etiological agent following a suspected food illness outbreak. Therefore, the need to develop rapid and accurate methods for the detection of Listeria are of paramount importance. The obvious market for these tests has prompted an intense effort in both commercial and academic laboratories to establish such methods. This chapter is an attempt to objectively review all of the literature on the subject published to date without the normal biases associated with such an effort. An excellent review of a number of microbiological, epidemiological and detection aspects of Listeria has been compiled by Miller, Smith, and Somkuti (1990).
