Abstract

Time-resolved X-ray experiments on phase transitions in lipid-water systems and/or on membranes are now feasible using the high X-ray intensities provided by storage rings (1–2). In the present work, that approach was used to follow the time course of temperature-jump induced transitions, in Escherichia coli membranes and their lipid extracts isolated from an unsaturated fatty acid auxotroph grown with different fatty acids (1). Earlier work had already demonstrated correlations between structural, morphological and physiological properties of these systems (3).
