Abstract
Our initial interest in immobilized enzymes developed from one particular project: conversion of milk lactose. Consequently the enzyme primarily with which we concerned ourselves was β -galactosidase, and reactor design considerations took into account the requirements of the dairy industry. The result is a basic reactor configuration which lends itself particularly well to applications involving viscous or colloidal substrates and where thorough cleansing must be performed frequently.
