Abstract

Fatty acids (FA) are critical to the maintenance of physiological homeostasis. They are the major source of energy, provide essential building blocks of membrane structure, and play a variety of modulatory functions either as FA themselves or as precursors of hormone-like molecules. An immunomodulatory role for dietary FA has long been the subject of investigation (see, e.g., Meade and Mertin, 1978; Cave, 1991). A variety of in vivo and in vitro studies involving long-term exposure to FA have obtained evidence suggesting both inhibition and stimulation of cytolytic T lymphocyte (CTL) activity by cis-unsaturated FA treatment (Meade and Mertin, 1976; Bialick et al., 1984).
