Abstract

Since its adoption by the Association of Official Analytical Chemists in 1985 (1, 2), an enzymatic-gravimetric procedure has been widely used for the determination of total dietary fiber (TDF), particularly, in the United States. Compared to other published methods (3, 4) the AQAC/TDF method is relatively rapid, not so tedious and does not require highly skilled analysts nor sophisticated instruments. However, its procedure still calls for three separate enzyme hydrolysis steps and three periodic pH adjustments.
