Abstract
This chapter is a continuation of Chapter 9, which covered isolation and characterization of the structure of the pancreatic and venom phospholipases. In this chapter, emphasis shifts from protein structure to the interaction of the protein with water, metal ions, and substrates or their analogs. Since substrate-enzyme interaction is dependent on protein structure, frequent reference to Chapter 9 is essential. Also, where germane, references are made to the mechanism of action of other phospholipases.
