Abstract
The variety of hydroxy acids derived from arachidonic acid and other polyunsaturated fatty acids that have been isolated from mammalian tissues is increasing rapidly. These hydroxy acids are products of metabolism initiated by several different enzymes. These include fatty acid cyclooxygenase [1–3], 5-lipoxygenase [4–24], 12lipoxygenase [25–31], 15-lipoxygenase [32–36], and thyroid iodide peroxidase [37–39]. In addition, hydroxy acids derived from arachidonic acid and other polyunsaturated fatty acids have been isolated from mammalian tissues which may be products of enzymes that have not been classified [40–45]. In some instances, hydroxy acids isolated from mammalian tissues may be nonenzymatically formed oxygenation products of arachidonic acid and other polyunsaturated fatty acids.
