Mass Spectroscopy

  • Chapter
Book cover Food Analysis

Abstract

Mass spectrometry has long been useful in the identification and determination of the composition of mixtures, particularly those organic in nature. Techniques are now available to use a mass spectrometer directly as a detector for the components separated by a gas Chromatograph. Thus, an understanding of the basic principles of mass spectroscopy is essential for all analysts.
