Abstract

Double bonds in naturally occurring dietary fatty acids are in the cis configuration. The trans isomers of these acids, such as those appearing during hydrogenation of oils, differ markedly in their spatial configuration from the natural form (Pig- 1). Since we have been interested in the relationship between the configuration of dietary fatty acids and their effect on plasma lipids and lipoproteins in man (1, 2), we selected trans isomerized fat as a model to use in studies designed to determine whether the lipid-lowering effect of unsaturated fats is related to their configuration or whether unsaturation per se produces the observed effect.
