Abstract

This review describes the use of 31P nuclear magnetic resonance (NMR) to study the structure and dynamics of model and biological membranes. 31P NMR has proven to be a powerful, nonperturbing probe of membranes. This review begins with an introduction to the structure of the membranes under consideration. Other reviews in the area include Seelig (1978), Yeagle (1978), and Smith and Ekiel (1984).
