Abstract

The gastrointestinal tract has long been known to be among the most reactive of the organ systems in humans (Beaumont, 1833; Cannon, 1929; Pavlov, 1910). The esophagus, the stomach, and the small and large intestines make up the major organs of this system, and the general anatomical structure of these organs is similar in that they are composed of an outer layer of longitudinally oriented smooth muscle covering an inner circular smooth muscle layer (Vander, Sherman, & Luciano, 1975). It is the contractions of these outer longitudinal and inner circular smooth muscle layers that produce the propulsive or peristaltic activity of the gastrointestinal tract. Beneath these muscle layers lie the muscularis mucosa, composed of both circular and longitudinal muscle fibers, and the submucosal and mucosal linings of the lumen, which contain exocrine gland cells secreting protective fluids and, in the intestine, digestive enzymes.
