Abstract

The bakery industry in the U.S. shipped about $22 billion worth of bakery products in 1987, representing approximately 7% of total value of food and kindred products in the same year [36]. In Canada, with population about 10% that of the U.S., the bakery industry shipped $1.33 billion worth of products, representing about 4% of total food industry shipments in the same year [4]. Bread forms about half of the total value of bakery products shipped, while pies, cakes and cookies make up one quarter, plain rolls and buns about 14% and the remaining products are doughnuts, fruit buns and sweet goods, pizza pies and crusts, frozen pre-cooked pies, frozen dough, meat pies, etc. [13]. The U.S. Department of Commerce forecasts aggregate shipments of all baked products to rise 1.5% annually between 1987 and 1992 [36].
