Abstract

“Micronutrients” is the collective term used to describe vitamins and trace elements, both of which are required in only small amounts by the body. Vitamins may be present in the diet as such or derived from pro-vitamins. Foods, for instance, can contain vitamin A either as retinol or as pro-vitamin A carotenoids from which vitamin A can be formed. 13-Carotene is the most important pro-vitamin A in the human diet. Vitamins and trace elements such as iron, zinc, and copper serve many metabolic functions, often as part of protein complexes like in haemoglobin and metalloenzymes.
