Abstract
Celery is an annual or biennial herbaceous plant of the parsley family with strong antioxidant activity and this is correlated with the total phenolic and flavonoid contents. This chapter describes the botany, history, producing regions, flavor and aroma, parts used, and active constituents. The chapter also highlights the uses of celery in different recipes around the world. It is a notable ingredient in the Bloody Mary cocktail. Celery has been reported to have carminative, laxative, stimulant, antirheumatic, anti-inflammatory, anticarcinogenic, hypolipidemic, and antioxidant properties. Finally the medicinal uses, functional properties, and antioxidant properties of celery are discussed in great detail.
