Abstract

The chemical and physical properties of proteins can be ascribed to their primary, secondary, and tertiary structure. All these structures are interdependent and can therefore be influenced by chemical reactions modifying the main polypeptide chain and the side chains of the constituent amino acids (i.e., by altering the primary structure). Owing to the presence of a large number of various side chains, keratins possess a wide diversity of chemical reactions.
