Abstract
Atherosclerosis and its sequelae, principally coronary heart disease and cerebrovascular accidents, are easily credited with being the number one killer in the United States. While many factors have been identified in the process of atherosclerosis, nutrition is one which offers the most obvious potential for intervention. What is eaten is regularly chosen and, if there is any causal connection between diet and atherosclerosis, this choice would provide a simple and straightforward opportunity to deter or prevent atherogenesis.
