Abstract

Carbohydrates are the cheapest form of energy available to the human metabolism. They form the energy stores of most plants, and hence they are easily cultivated and harvested. In fact, the affluence of a community, and indeed of a family unit, could be judged by the proportion of its energy intake present as carbohydrate.
