Abstract
Assessment of selenium bioavailability in foods requires a lengthy feeding period before a measurable change in body selenium status can be observed. The present study was designed to find out whether bioavailability of selenium to humans can be measured in a short-term experiment, that is within 1–3 hrs after giving a large single dose of selenium-containing food. Alterations in plasma and erythrocyte selenium in the short-term experiment were compared to changes in plasma and erythrocyte selenium of subjects receiving supplemental selenium for 4 weeks.
