Polycyclic aromatic hydrocarbons (polynuclears) in foods

Abstract

Ever since benzo (a) pyrene (BaP)1 was recognized as a carcinogen, at the beginning of this century, the presence of it and of other polycyclic aromatic hydrocarbons (PAH) in the environment has received continuous attention. As a result numerous reviews have been published, the most recent ones being the following: Andelman and Suess (1970), U.S. NATIONAL ACADEMY OF SCIENCES (US NAS 1972), U.S. ENVIRONMENTAL PROTECTION AGENCY (US EPA 1975)and INTERNATIONAL AGENCY FOR RESEARCH ON CANCER (IARC 1973). A symposium on PAH has also been held recently (Freudenthal and Jones 1976).
