Abstract

The complement of enzymes in a differentiated tissue from an adult animal or person is quite characteristic for that tissue. It may change in response to hormonal or dietary influences, but is generally such that tissue metabolism is optimal under a particular set of conditions. While some enzymes are common to all tissues, the quantities may vary from organ to organ. Other enzymes are found predominantly in a particular organ. Amylase, for example, is found in highest concentration in the pancreas; a different form of the enzyme occurs in saliva. Lactose synthase is confined to the lactating mammary gland, whereas the enzymes of gluconeogenesis are limited to the liver and the kidney cortex.
