Abstract

The single dietary substance most often condemned by present day evangelists of nutrition is refined sugar. Much of the rhetoric can be traced to Dr. Cleave and his notion, which we considered in Chapter 3, of a “saccharine disease.” Perhaps the greatest popularizer and corrupter of the ideas of Dr. Cleave was William Dufty. His book, Sugar Blues, was published in 1976 and became a best seller; well over a million copies were printed.
