Fiddling in hotel bars: types, patterns, motivations and prevention

Abstract

It is tempting to see fiddling as an innocent perk, but on a broader scale the cost of fiddling and employee theft to business and industry is enormous. A recent survey by the British Retail Consortium estimated that staff theft in the retail industry accounted for £554.5 million a year (Burrows and Speed, 1994). This is not an isolated example: it was estimated that £2 million a year was lost through airline staff fiddling drinks on flights, and fraud by employees costs British Rail’s buffet car service £1 million a year (Horsnell, 1989). By the same token a hotel, restaurant and public house chain with a turnover of £ 100m a year was said to have lost £3 million (or 3 per cent of turnover) through staff fiddles (Catering South West, 1988).
