Abstract

The second part of this study is devoted to salt and the state, specifically to six salt administrations which have played a significant role in the lives of major states. From production, distribution and consumption, the analysis turns to monopolies, limited or extended, direct or indirect; to fiscality, welfare and diplomacy; to what the state did in the salt administration and what the salt administration did in the state. We begin with some delineation of what is meant by a salt administration and an account of the categories we propose to use in the analysis of examples which follows.
