Bar and Cellar Operation

  • Chapter
Book cover The New Catering Repertoire

Abstract

There are several kinds of bar including the Public and Lounge bars of a public house or inn, and the bar of a residential hotel which may be open to allcomers, or to residents only; sometimes this kind of bar goes under a name such as American Bar, Cocktail Bar or one that is in keeping with the decor or that reflects some historical association. Catering establishments also have a behind-the-scenes bar called the Dispense Bar where waiters obtain drinks for restaurant customers who order an aperitif while waiting in the foyer or lounge. This kind of bar is utilitarian but needs to be situated near the restaurant.
