Abstract

Catering for people on the move is a much more demanding job than when doing so in the usual static environment; it is a job that calls for skills and knowledge above and beyond the norm. Doing a job whilst moving at speed or on an undulating floor brings a need not just for good equilibrium but also to be able to cope with a rush of passengers, all of them wanting to be served in a hurry. Above all, it shows the need to be able to keep calm while working under pressure and to be able to show a smiling face although inwardly seething, possibly because of some customer’s ill-manners.
