In 1752 Réaumur940 showed that meat was digested without putrefaction by the regurgitated gastric juice of his pet buzzard. Spallanzani in 17831093 used human gastric juice to confirm these in vitro results. Neutral gastric juice was found to be inactive until mixed with hydrochloric acid. This proteolytic action must, therefore, have been due to a specific component of gastric mucosa, which was named pepsin by Schwann in 1836,1032 and crystallised by Northrop in 1930.886
