When it comes to desired food safety performance by employees, many professionals think that the first step in achieving conformance is to make sure all employees receive proper food safety training. Others think that the key to conformance is to regularly inspect retail food establishments for certain behaviors, outcomes, or conditions. In fact, training and inspections are two of the most commonly used tools by food safety professionals when attempting to achieve a desired performance objective.
