Abstract

This chapter is concerned with the structure and properties of polymers at the fluid-fluid interface. This topic is of major importance in understanding the formation, stability and breakdown of liquid-liquid dispersions (emulsions) and air-liquid dispersions (bubbles and foams) [1]. However, we do not consider emulsion and foam stability as such. Two other situations where the subject of polymers at fluid-fluid interfaces are important are, firstly, the interface between polymer melts (see sec. 2.10), and, secondly, the interface between the two co-existing phases which form as a result of phase separation in bulk polymer solutions (see sec. 1.1.5).
