Zusammenfassung
The isomerizations considered in this chapter can be divided in two groups: those which catalyze the transformation aldose—ketose and those which catalyze the inversion of an hydroxyl group. There are indications of definite differences between the mechanisms of both processes and eventually they will have to be separated. As a matter of convenience, however, the different isomerases have been ordered in this chapter according to the number of carbon atoms in the carbohydrates on which they act.
