The Role of Hydrophobic Interaction on Hydration Forces in Thin Aqueous Layers
It is generally recognized that part of the water in biological systems has assumed a structure different from the bulk one 1,2. This effect is attributed to the adsorptive interaction of water molecules with the different membranes and biomacromolecules. According to the diversity of cellular interfaces there will be a large number of regions of more or less restricted molecular mobility. By dealing with such a complex system the general question how an interface by its nature can carry its influence into the structure of water nearby might hardly be solved.
