Abstract

Industrial gases have a wide range of uses and functions in foods and food processing. The atmosphere in which food is stored can affect its stability, colour, flavour and texture. Gases incorporated into products can play a major part in determining the texture of a product. Liquefied gases are widely used to chill and freeze food products.
