Optimal Operations of a Batch Enzyme Reactor: Isomerization of D-Glucose to D-Fructose
Enzymatic isomerization of D-glucose results in a mixture containing both D-glucose and D-fructose, which is approximately equivalent in sweetness to an invert sugar obtained by hydrolyzing sucrose and which can be used successfully in place of sucrose in many applications such as in beverages and baked foods. With an abundant supply of corn starch hydrolyzates available at a reasonable price many major corn processing companies and sugar refineries have entered or are entering into the business of producing high fructose mixtures from these hydrolyzates (1). This represents one of the largest industrial applications of enzymes (2), an extensive review of which has been given by Hamilton et al (3).
