Nutritional Aspects of Phospholipids and their Influence on Cholesterol

Abstract

Among prosperous societies, cardiovascular disease is the most common single cause of death. Important factors increasing the risk of the disease are mainly of nutritional origin, like over-nutrition, high fat and cholesterol intake, and too much salt or alcohol. There is no doubt that this is a disease of affluence, and increasing affluence makes it difficult to moderate the diet, and thus to decrease the death rate of this disease. The development of atherosclerotic lesions begins with a thickening of the intima and deposition of plaques, containing a lipid mass, particulary cholesterol and cholesterolesters. In advanced stages, calcification may occur. The “lipid hypothesis” refers to such a central role of cholesterol, but there are many controversial viewpoints, reflecting the complexity in the initiation of the disease.9, 11, 17
